I love cheesecake.
In fact, I don’t like regular cake at all. So we had cheesecake for our wedding cake. With all the toppings on the side. That way, you could choose what topping you wanted….or none at all.
I came across this recipe about 8 years ago. I love it. It is really simple and tastes DELICIOUS! The white chocolate chips ( and I am NOT a white chocolate fan ) totally offsets the cheesecake flavor and is the perfect accent. Give it a try, you’ll love it!
White Chocolate Cheesecake

2 pkg (8 oz) cream cheese, softened
½ c sugar
½ tsp vanilla
2 eggs
2/3 c white chocolate chips
1 ready to use chocolate or graham cracker pie crust (9 in)

Mix: cream cheese, sugar and vanilla with mixer. Add eggs and mix again. Stir in 1/3 c white chocolate chips.

Pour into crust. Sprinkle with remaining white chocolate chips.

Bake at 350 for 35 mins or until center is almost set. Cool. Refrigerate for 3 hours or overnight.
